Which of these two is correct - I always get stuck with this.

The latter with 'were' sounds correct to my ear, because you've used and, so it's all of them/plural.
If you'd used or then 'was' would be correct.

- actually I'm not si sure about that. Either way, 'were' sounds right to me.

Because of the 'and' the expression is definitely plural, so it has to be 'were'.
