I love the apple pies in the making. Could you extend the analogy I wonder by using a different word than brewing which makes me think of cider?
Baking w0ont work because that suggests warm winds, but something similar might work.

Not a big fan of apple pies, although I appreciate they are seriously good things. What I did like about this haiku (is it? not big on technical stuff) is the an-ti-ci-pation element. Works every time, in any context. Cool stuff.

Mac, I tried to think of another word, but I think the 'brewing' made me think of a storm brewing, ready to whip the apples from the tree. I think I'll leave it as it is.

Lovely haiku, very vivid as usual.
I must admit I too wasn't entirely convinced about the use of the word "brewing" at first - my immediate reaction was, apple pies don't brew.
But my second reaction was, so what! Your haiku doesn't really suggest they do.
What I'm trying in a long-winded and confusing way to say is, really good, leave it as it is!
